  • 10 pcs turkey legs


  • 1 gallon water
  • 1/2 cup kosher salt
  • 1/2 cup brown sugar
  • 3 tbsp garlic powder
  • 3 tbsp onion powder
  • 3 tbsp dried thyme
  • 3 tbsp dried sage
  • 1 1/2 tbsp black pepper
  • 1 tsp ground cloves
  • 1 tsp ground all spice
  • 1 tbsp paprika
  • 1 tsp liquid smoke


  • In a large pot, mix all the ingredients to make the brine. Boil and let it cool.
  • Rinse turkey legs and place them in a large container. Pour your cool brine into the turkey legs container, submerge the legs and cover. Refrigerate overnight.
  • When grilling the turkey legs, make sure to periodically check it and turn it in every once in a while. You should maintain your grill temperature to 300-325 degrees.
  • Slow cooking may result in very tender and juicy turkey legs. Let it grill for about 3 1/2 to 4 hours. Make your turkey legs turn to a nice and dark smoky color.
  • Once cooked, serve it immediately!
