  • 3.3 lbs pork rib chops, about an inch thick 6 pieces
  • 1 tbsp brown sugar packed
  • 2 tbsp paprika
  • 2 tbsp garlic powder
  • 1/2 tbsp chili powder
  • 1/2 tsp ground mustard
  • 1/2 tsp old bay seasoning
  • 1/2 tsp onion powder
  • 1 1/2 tsp salt
  • 1/2 tsp freshly ground black pepper


  • Combine and mix all the spices in a small bowl. Press down the brown sugar with your spoon to remove lumps.
  • With your spice mixture, coat the pork rib chops, rub it all over, and be generous to the spices on the top, bottom, and sides.
  • Put your pork rib chops in a container and cover them with plastic wrap or aluminum foil. Place it in the refrigerator for about 2 to 3 hours.
  • Start up your smoker and bring the temperature to 225ºF.
  • Place the pork rib chops in the smoker and cook it until the internal temperature of the meat reach 150 ºF.
  • You can cook them longer if you would like your pork well done.
