Smoked Carrots Recipe

  • 1 lb carrots orange carrots or rainbow carrots
  • 1/4 cup olive oil
  • 1/4 cup honey
  • salt and pepper to taste
  • fresh thyme to taste

Instructions
 

  • Preheat your smoker or grill to around 225°F. We want that low and slow heat for smoky goodness!
  • Wash and peel the carrots, trim off the tops and ends, and cut them lengthwise into halves or quarters. Make sure all piece are roughly the same size to allow for even cooking.
  • In a mixing bowl, toss the carrots with a drizzle of olive oil then season with salt, pepper, and fresh thyme to your liking.
  • Place carrots directly on the grill grates and smoke for about 45 minutes to an hour.
  • While the carrots are smoking, prepare the basting mixture by combining equal parts honey and olive oil.
  • After about 45 minutes, start basting the carrots with the honey and olive oil mixture.
  • Continue smoking the carrots for another 15-20 minutes, or until they are tender and have a nice caramelized glaze on the outside.
  • Carefully remove the smoked carrots from the smoker using tongs or a spatula and transfer to a serving platter to rest.
  • Serve your delicious smoked carrots as a side dish to complement your favorite BBQ meats or enjoy them on their own. They'll add a smoky, sweet, and savory twist to your meal!
