Thai Grilled Chicken Pizza Recipe

Ingredients
  

  • 1 whole wheat pizza crust (12-14 inches)
  • 1 boneless, skinless chicken breast
  • 1 tsp curry powder
  • ½ cup shredded carrots
  • ½ cup shredded red cabbage
  • ¼ cup chopped sugar snap peas
  • ¼ cup fresh cilantro leaves
  • ¼ cup sweet Thai red chili sauce (optional)

For the Peanut Sauce:

  • ½ cup peanut butter
  • ½ cup coconut milk
  • ¼ cup agave nectar
  • ¼ cup fresh lime juice
  • 2 tbsp soy sauce
  • ¼ tsp garlic powder
  • ¼ tsp red pepper flakes

Instructions
 

  • Preheat grill to high and place pizza stone on it.
  • Season chicken with curry powder and grill for 15 minutes, flipping once halfway through. Check temperature for 165°F, then rest and slice.
  • Blend peanut sauce ingredients in a food processor or blender until smooth.
  • Spread sauce on pizza crust, add chicken, cabbage, and carrots.
  • Grill pizza for 5 minutes or until crust is golden brown.
  • Top with cilantro and sugar snap peas. Add chili sauce if desired. Slice and serve.
