How to Make Gluten Free Mac and Cheese with Dorito Crust

Preparation

Preheat your smoker to 300°F.
Boil your gluten-free pasta according to the package directions, but stop at al dente—it’ll finish cooking on the smoker.

In a saucepan, make a roux by combining the butter and gluten-free flour. Stir continuously over medium heat until smooth. Slowly add in the cream, stirring constantly for 2–3 minutes until thickened.

Add in your shredded cheese and stir until melted and creamy. Mix in the Motley Que Habanero Fixx rub and a dash of Truff Hot Sauce for a spicy kick.

Gently fold the cooked pasta, sour cream, and mayo into the cheese sauce. Pour the mixture into a foil tray.

Cooking

Crush your favorite gluten-free Doritos (Nacho Cheese or Spicy Sweet Chili work great) and spread them evenly over the top.

Place the tray in the center of the smoker and cook uncovered for 1 hour, or until the topping begins to brown. If the Doritos start to get too dark, cover loosely with foil for the remainder of the cook.

  • 2 tbsp Butter
  • 2 tbsp 1/1 Gluten Free Flour

  • 1 cup Sour Cream
  • 1 cup Mayonnaise
  • 1 bag Nacho Cheese Doritos

Instructions
 

  • Preheat smoker to 300°F
  • Boil gluten-free pasta to al dente
  • Make a roux with butter and GF flour
  • Add cream and cheese until melted
  • Stir in hot sauce, rub, pasta, sour cream, and mayo
  • Pour into a foil tray and top with crushed Doritos
  • Smoke for 1 hour, covering if topping browns too quickly
