Grilled Chicken Kabobs With Vegetables

Equipment

Ingredients
  

  • 6 boneless, skinless chicken breasts (cut into 1.5-inch pieces)
  • 2 yellow squash (cut into 1.5-inch pieces)
  • 2 zucchini (cut into 1.5-inch pieces)
  • 2 red or orange bell peppers (cut into 1.5-inch pieces)
  • 1 red onion (cut into 1.5-inch pieces)

Marinade Ingredients:

  • ½ cup olive oil
  • ½ cup white wine vinegar
  • ½ cup white wine
  • 5 cloves garlic (minced)
  • 2 tbsp Italian seasoning
  • 2 tbsp sugar
  • 1 tbsp kosher salt
  • 2 tsp black pepper
  • 1 tsp red pepper flakes
  • 1 lemon (zest and lemon juice)

Instructions
 

  • Cut boneless skinless chicken breast and veggies into 1.5-inch pieces, keep them uniform.
  • Mix marinade ingredients in a bowl.
  • Marinate chicken and veggies for 6-8 hours is perfect.
  • Skewer meat and veggies in a repeating pattern, season with salt and pepper.
  • Grill kabobs for 4-5 minutes, then turn and grill for another 4-5 minutes.
  • Check the chicken's internal temperature (165°F is perfect).
  • Serve kabobs hot off the grill or let them rest for a minute or two before eating.
