Ingredients
  

  • 2 tbsp olive oil
  • 6 medium-sized russet potatoes, chopped into 1" cubes 1/4 inch dice
  • 2 cups leftover cooked beef brisket (chopped) 1/4 inch dice
  • 1 green bell pepper, chopped
  • 1 small sweet onion, chopped
  • 4 cloves minced garlic thinly sliced
  • 1 tsp garlic powder thinly sliced
  • 1 tsp onion powder 1/4 inch dice
  • 1 tsp smoked paprika
  • 1 tsp each of kosher salt and pepper
  • 1 pinch cayenne pepper plus 1/4 to 1/2 cup braising liquid
  • 4-6 large eggs
  • 1/2 cup barbecue sauce
  • Thinly sliced green onion (garnish)

Instructions
 

  • Heat the vegetable oil in a large skillet on a grill over medium heat.
  • Add the chopped potatoes to the skillet and cook for 10-12 minutes, or until they are tender and lightly browned.
  • Add the chopped brisket, green bell pepper, sweet onion, minced garlic, garlic powder, onion powder, smoked paprika, kosher salt, black pepper, and cayenne pepper to the skillet.
  • Stir the ingredients together and cook for an additional 8-10 minutes, or until the vegetables are tender and the brisket is heated through.
  • Crack the eggs on top of the hash, cover the skillet, and let the eggs cook to your desired doneness.
  • Drizzle barbecue sauce over the top of the hash and eggs.
  • Garnish with thinly sliced green onion.
  • Serve hot and enjoy your delicious breakfast hash!
