Ingredients
  

  • 1 pound of brisket, cooked and chopped into small pieces
  • 2 pound of Russet potatoes, peeled and cut into thin fries
  • 1 tbsp of paprika
  • 1 tbsp of garlic powder
  • 1 tbsp of onion powder Sliced
  • 1 tbsp of kosher salt
  • 1/2 cup Chipotle Sauce
  • 1/2 tbsp of black pepper
  • 2 tbsp of olive oil 

Toppings

  • Chopped green onions
  • cheese sauce
  • pico de gallo

Instructions
 

  • Preheat your pellet smoker to 375°F.
  • In a large bowl, mix together the paprika, garlic powder, onion powder, kosher salt, and black pepper.
  • Chop your previously smoked brisket into small pieces and sprinkle with some of the spice rub.
  • Slice potatoes into uniform wedges, place in a large bowl and drizzle with olive oil then coat with the remaining spice mixture. Toss them to make sure they’re evenly coated.
  • Spread the potato wedges out on a wire rack or directly on the pellet smoker grates, making sure they’re in a single layer.
  • Put the wire rack or grates with the potatoes in the pellet smoker and cook for 20 minutes.
  • After 20 minutes, take the potatoes out of the pellet smoker and place them in a single layer in a large cast-iron skillet or baking dish.
  • Top the french fries with the spice-coated brisket pieces.
  • Put the skillet or baking dish back into the pellet smoker and cook for an additional 10-15 minutes, or until the potatoes are crispy and the brisket is heated through.
  • Serve immediately and enjoy your delicious brisket fries!
