Preheat your pellet smoker to 375°F.
In a large bowl, mix together the paprika, garlic powder, onion powder, kosher salt, and black pepper.
Chop your previously smoked brisket into small pieces and sprinkle with some of the spice rub.
Slice potatoes into uniform wedges, place in a large bowl and drizzle with olive oil then coat with the remaining spice mixture. Toss them to make sure they’re evenly coated.
Spread the potato wedges out on a wire rack or directly on the pellet smoker grates, making sure they’re in a single layer.
Put the wire rack or grates with the potatoes in the pellet smoker and cook for 20 minutes.
After 20 minutes, take the potatoes out of the pellet smoker and place them in a single layer in a large cast-iron skillet or baking dish.
Top the french fries with the spice-coated brisket pieces.
Put the skillet or baking dish back into the pellet smoker and cook for an additional 10-15 minutes, or until the potatoes are crispy and the brisket is heated through.
Serve immediately and enjoy your delicious brisket fries!
