Preheat your smoker to 250°F. Let it heat up for 30 minutes.
Rinse and pat dry the chicken wings.
In a small bowl, mix together the olive oil, salt, pepper, paprika, garlic powder, and onion powder.
Brush the mixture onto the chicken wings.
Place the chicken wings on the smoker's grates.
Close the lid and smoke the chicken wings for 30 minutes at 250°F.
After 30 minutes, increase the smoker temperature to 425°F.
Continue to smoke the chicken wings until they reach an internal temperature 165°F (use a meat thermometer to check).
Once they reach the desired temperature, remove the wings from the smoker and let them rest for 5 minutes before serving.
