Ingredients
- 1 Skirt Steak
- ¼ cup Pit Boss Southwest BBQ Rub
- 1 tbsp Boar’s Night Out White Lightning
- ¼ cup Smokeshow Jalapeno Ranch Sauce
- 1 Onion
- 2 each Sweet Red and Yellow Peppers
- 2 each Ripe Avocados
- 4 each Flour Tortillas
- 2 cups Shredded Cheddar Cheese
- 1 tbsp Butcher BBQ Butter Flavour Grilling Oil
- 1 tbsp Boar’s Night Out White Lightning Double Garlic Butter
Instructions
1. Preparation
- Preheat your smoker or BBQ to 500°F, topping it with grill grates if available.
- Season the skirt steak with a light coating of Boar’s Night Out White Lightning and a heavy coating of Pit Boss Southwest BBQ Rub. Let it rest at room temperature for 20 minutes before grilling.
2. While the Steak is Resting
- Slice the peppers and onion and toss them with Butcher BBQ Butter Flavour Grilling Oil and Boar’s Night Out White Lightning Double Garlic Butter.
- Cook the peppers and onions in a hot skillet, stirring occasionally for about 10 minutes until golden brown.
3. Searing the Skirt Steak
- Place the skirt steak on the grill and press down with a spatula to build grill marks.
- Flip the steak every 2 minutes until the internal temperature reaches 135-140°F.
- Once done, remove the steak and let it rest, wrapped in foil, for 5-10 minutes.
4. Toasting the Tortillas
- While the steak rests, warm the tortillas on the grill. This makes them more flexible and adds flavor.
5. Building the Tacos
- Slice the skirt steak and avocados into ¼ inch thick slices.
- For each taco, add 4-5 slices of steak and avocado to each warmed tortilla.
- Top with shredded cheddar cheese, peppers and onions, and a squeeze of Smokeshow Jalapeno Ranch Sauce.
- Fold the tortilla and enjoy!
