Ingredients
- Seeds from 1 whole pumpkin
- 1 can Cornhusker Kitchen Duck Fat Spray
- 3 tbsp Fire and Smoke Society The Usual Seasoning
Instructions
1. Preheat the Smoker
Set your smoker to 300°F and let it come up to temperature.
2. Clean the Pumpkin Seeds
Place the raw seeds in a strainer and rinse under cold water. Use your hands to remove any leftover pumpkin pulp or stringy bits.
3. Season the Seeds
Spread the clean seeds in a single layer on a baking sheet or tray. Spray evenly with duck fat spray, then sprinkle with The Usual seasoning.
4. Smoke the Seeds
Place the tray on the smoker and cook for around 30 minutes, stirring once halfway through. Add more seasoning at the halfway mark if desired. Seeds are ready when they start to turn golden and slightly brown.
5. Cool and Store
Let the seeds cool for about 10–15 minutes before serving. Store them in an airtight container:
- Up to 1 week in the fridge
- Or 2–3 days at room temperature for snacking
