Smoked Cedar Plank Salmon Recipe
- 2 cups hickory
- cherrywood or applewood chips
- 1 cedar grilling plank
- 3/4 cup packed light brown sugar
- 1/2 cup kosher salt
- Freshly ground pepper
- 1 pound skin-on center-cut wild salmon fillet
- 2 slices lemon
- 3 to 4 sprigs thyme
- Create a brine by combining brown sugar, salt, 1 tsp pepper and 4 cups of water in a large bowl. Stir until dissolved and submerge salmon completely. Place something over the salmon to ensure the entire fish is underwater. Cover and refrigerate for over 2 hours.
- Soak wood chips and cedar plank in water for one hour, then prepare your grill for smoking.
- Preheat smoker to 250F
- Take the salmon out of refrigerator about 30 minutes before smoking, drain and pat dry with paper towel.
- Place salmon skin-side down on the cedar plank and season with salt and pepper. Top with lemon slices and thyme sprigs, and let sit at room temperature for 30 minutes.
- Place the salmon plank on the cooler side of the grill and let smoke until it turns golden and cooked through, about 20 minutes.
- If using a gas grill, turn off the flame and let the salmon sit for 10 more minutes (this is not necessary if using charcoal).
- Remove from the grill and serve
