How To Make Smoked Beef Short Ribs


Step 1 – Preheat Your Smoker

Preheat the smoker to 225ºF/107ºC and prepare the wood chips. We recommend using Oak or Cherry wood, though you’re welcome to use whichever wood chips you prefer.


Step 2 – Trim Your Beef Ribs

Trim your beef ribs to remove the fat caps and silver skin. It’s important to leave some fat for marbling to add incredible flavour, though the fat caps should mostly be removed before cooking.


Step 3 – Season Your Ribs

Cover your ribs in brown mustard to add an incredibly rich flavour, then season your ribs with salt, pepper, and garlic powder. Ensure your seasoning covers all sides of the ribs and be generous.


Step 4 – Smoke Your Ribs

Smoke the ribs for 3 hours initially to provide a rich, smokey flavour to your meat. Try to leave your smoker covered for the full three hours before advancing to the next stage in the process. Do not remove your ribs after the 3 hours.


Step 5 – Spray Beef Ribs

Prepare beef stock in a spray bottle and regularly spray the ribs every 30 minutes in the smoker to ensure the meat doesn’t dry out. The beef stock will both add flavour and ensure the meat remains juicy and succulent.


Step 6 – Remove Meat

After a total cooking time of 7/8 hours (and many beef stock sprays), remove the ribs from the heat and allow to rest in aluminum foil for 10 minutes. Resting your meat after smoking allows the juices to settle and distribute through the meat for incredible flavour and texture.


Step 7 – Serve!

Serve your ribs in individual slices for a quick and easy snack, particularly if you’re serving a large number of people. Cut your ribs between the bones to create smaller bites and serve on a platter.
