Ingredients
- 1 package King Oyster Mushrooms
- 1 lb Thick Cut Bacon
- 2 tbsp Boar’s Night Out White Lightning
- ¼ cup House of BBQ Experts Samurai Sauce
- 1 can Cornhusker Kitchen Duck Fat Spray
Instructions
1. Preheat Your Grill
Set your smoker or pellet grill to 500°F.
2. Soak the Skewers
Soak bamboo skewers in water for at least 20 minutes to prevent burning.
3. Prep the Ingredients
Slice King Oyster Mushrooms into thirds. Then cut the bacon into 1.5″ sections.
4. Build the Skewers
Start with a mushroom piece, then stack 2–3 bacon pieces to match the thickness. Alternate until the skewer is filled with roughly equal parts bacon and mushrooms.
5. Season and Spray
Sprinkle the skewers with Boar’s Night Out White Lightning and lightly coat with duck fat spray.
6. Grill and Flip
Place the skewers on the grill and cook for 12 minutes, flipping every 3 minutes for even browning.
7. Glaze with Sauce
In the final 3 minutes, brush one side with Samurai Sauce. Flip and brush the other side before the final pull.
8. Serve Hot
Serve the skewers immediately with extra Samurai Sauce on the side for dipping.

Can I use other mushrooms?
Yes! King Oyster (aka King Trumpet) mushrooms are ideal because of their thick, meaty texture that cooks at a similar pace as bacon. You could also use Portobello, Shiitake, or Cremini if King Oysters aren’t available—just pick a firm mushroom that holds up on the grill.
Vegan or vegetarian version?
Skip the bacon and duck fat, and you’ve got a solid vegetarian-friendly skewer. King Oyster Mushrooms hold their own with flavor and texture. Make a few all-mushroom skewers so everyone at the party can enjoy them.
What if I’m Gluten Free?
The Samurai Sauce contains gluten. Swap it for a gluten-free white BBQ sauce like Lane’s BBQ Sorta White or Motley Que Ivory Heaven. Both pair well with the smoky richness of the mushrooms and bacon.
