Smoked Porterhouse Steak

  • 2 porterhouse thick-cut steaks
  • kosher salt
  • freshly ground black pepper
  • 4 tbsp avocado oil
  • 4 tbsp butter
  • 2 garlic cloves
  • 2 sprigs of fresh thyme
  • bacon tallow butter (optional)

Instructions
 

  • Remove the steaks from the refrigerator and let them sit at room temperature for 30 minutes to 1 hour before cooking.
  • Preheat your pellet smoker to 225°F.
  • Season steaks with equal parts salt and pepper, or for a little extra flavor, try our BBQ Hero Steak Rub
  • Place the steaks on the preheated pellet smoker and smoke uninterrupted for 30 minutes. After 30 minutes, flip the steaks and use a meat thermometer to check the internal temperature.
  • Remove the steaks from the pellet smoker when they reach an internal temperature of 10°F under your desired level of doneness (125°F for Medium Rare). This could take about an hour.
  • Heat a cast iron pan over high heat with avocado oil.
  • Sear the steaks for 2 minutes on each side to develop a nice crust. Add butter, garlic, and herbs for the last minute of searing and spoon it over the steak to baste it.
  • Remove from pan once the steaks have reached your desired level of doneness (125°F for Rare, 135°F for Medium Rare, 145°F for Medium, 155°F for Medium Well, 165°F for Well Done)
  • Let the steaks rest for 5-10 minutes before slicing and serving.
