Ingredients
  

  • 2 cups leftover brisket, shredded
  • 4 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1/4 cup diced onions
  • 1/4 cup diced jalapenos
  • 1/4 cup chopped cilantro
  • 2 tbsp vegetable oil
  • Salt and pepper to taste
  • Salsa, guacamole, and sour cream for serving

Instructions
 

  • Preheat a skillet or griddle over medium heat.
  • In a mixing bowl, combine the shredded brisket with diced onions, jalapenos, and cilantro. Season with salt and pepper to taste.
  • Place a tortilla on the skillet and sprinkle a layer of shredded cheese on top. Add a generous portion of the brisket mixture on half of the tortilla.
  • Fold the tortilla over to create a half-moon shape and press down gently with a spatula to seal the edges.
  • Cook for 2-3 minutes on each side or until the tortilla is golden brown and the cheese is melted.
  • Repeat the process with the remaining tortillas and brisket mixture.
  • Serve the brisket quesadillas hot with salsa, guacamole, and sour cream on the side.
