Brush steaks with olive oil and season with your choice of rub.
Place the steaks in the smoker away from direct heat and cover. Make sure they’re spaced away from one another.
Use a meat thermometer to see the internal temperature and remove meat from the smoker when the desired temp is reached. See the instructions below for a temperature guide.
Once removed, place tinfoil over the steaks and allow them to rest for a few moments.
Raise the heat of your smoker to 500° F (260° C) and allow it to heat up.
Place your steaks back into the smoker for 30 seconds to sear each side.
Remove the steaks from the heat and allow them to rest for 5 minutes.
Pair steaks with your favorite sides and condiments and serve.
