Smoked Venison Recipe

Ingredients
  

  • 1 lb Venison tenderloin
  • 2 tbsp 2 olive oil
  • 2 tbsp 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 tsp salt
  • tsp black pepper

Instructions
 

  • Place the venison tenderloin in a zip-style bag or large bowl.
  • In a blender or small food processor, combine the olive oil, lemon juice, minced garlic, salt, and pepper. Process until well mixed.
  • Pour the marinade over the venison and massage it into the meat. Cover and refrigerate for at least 4 hours, or up to overnight.
  • When you are ready to cook the venison, remove it from the marinade and rinse it off. Pat the venison dry and let it come to room temperature for 30 minutes.
  • Preheat your smoker to 225°F.
  • Place the venison in the smoker and cook for 1 1/2 to 2 hours, depending on the thickness of the meat. The internal temperature should reach 130°F for rare or 140°F for medium rare. Avoid cooking the venison to medium, as it should remain juicy.
  • Let the venison rest for 10 minutes before slicing and serving. You can sprinkle some extra black pepper on top if desired. Enjoy!
